Chemical and Amino Acid Composition of Amaranth Grain
Abstraсt
The studies were conducted in connection with the need for expanded cultivation of amaranth, in particular, the definition of species that can grow in Azerbaijan. Given the high nutritional value of amaranth and their processed products, it can be assumed that their use in the nutrition of the population by creating specialized products effectively satisfies the needs of the human body for nutrients and energy, and will partially solve this problem.
For the successful use of the potential of amaranth, as we have repeatedly noted, it is necessary to develop complex processing of amaranth seeds and leaves for the needs of not only the food and feed industries, but also the pharmaceutical industry.
